Pure New Zealand Greenshell™ Mussels with Roasted Garlic, Sweet Chilli and Cheddar Crumbs


24 x Pure New Zealand Greenshell Mussels™

1 medium bulb Roasted Garlic (chopped)
1/2 cup Red Onion (finely diced)
1/2 cup Sweet Chilli Sauce
1/2 cup Cheddar Cheese (grated)
200gms Soft Butter
1/2 cup Bread Crumbs
2 teaspoons Parsley (finely chopped)
1/2 teaspoon Salt



1. For the topping, combine the roasted garlic, red onion, sweet chilli sauce, cheddar cheese, soft butter, bread crumbs, parsley and salt in a medium bowl and mix well. Form into a log approximately the same diameter as a 50 cent coin and place in the fridge to chill for 30 minutes.

2. Place the thawed half shell mussels, flesh side up in a shallow baking tray. Remove the log mixture from the chiller and slice into 5mm disks. Place one disk onto each mussel and place under a hot grill for three to four minutes or until they start to brown – keep an eye on them!

3. When brown, remove and place on a platter or serving tray, sprinkle with more chopped parsley and finish with plenty of freshly ground black pepper.
